| Hi Gypsy!
I'm still waiting on a final diagnosis - I have either 'Minimal Change
disease or FSGS' ?! Either way my kidneys are failing me :-( And I'm
only 28?!

As for Pasta Sauces ... i have been eating a lot of chicken. For a
very tasty pasta suace try ...
Fry onion, red pepper, maybe asparagas, chicken (the sauce - add creme
fraiche and pesto sauce (which u buy in a jar already made) and heat
through with other ingredients. Its damned quick and delicious. i
have also taken to eating bagels, toast, sandwiches ... with this
filling i.e creme fraiche or soft cheese (but LOW Salt), chicken and
pesto.
Try poaching some chicken breasts in water.. with some lemon rind,
black pepper, a dollop of mustard. It takes about 10 minutes to
cook... adds flavour without salt ..the chicken is nice and moist.. and
its there in the fridge for a few days to have chicken sandwiches and
pasta until you start to cluck ;-)
