If I sign a statement that I want food and water withheld, it isn't an
informed consent if I don't know what I will be experiencing.

And so, if you've never had a postoperative infection, even though you
are told that this might happen after surgery, your consent to the
surgery is not "informed" because you have never experienced this
before? I guess no consent can be informed according to your
definition. And yet hospitals do surgeries every day! How ever do you
account for this?
