I'm using a Plantronics cordless phone that came with a headset.
The headset does detach from the phone (unlike my old GE phone
where the headset wire was permanently attached to the phone)
but they were sold together as a one product.

I have not had good luck in the past with buying a separate
headset to use with my phones even though most cordless phones
seem to have a jack for a headset these days. But maybe it was
my phone that was the problem, not the headset? I have seen
several people posting suggestions for headsets - I hope one
of these options work for you.

My one suggestion is to look for a headset that has its own
volume control as part of the headset, preferably a dial control
with a lot of range. Don't rely on the phone's volume control
(often just "high, med, low") because it will probably not give
you enough range of volume.

Hugs,
